Tomato Snowball
Ingredients
- 400 ml white tomato stock
- 100 ml heavy cream
- 6 sheets of gelatin
- 1 × balloon
- salt, pepper
Preparation
- bring stock to a boil and dissolve the steeped gelatin in
it.
- mix with the remaining stock and the heavy cream.
- Pour through a sieve into a 0.5 l Whipper, screw on 1 N2O
Charger and shake vigorously.
- Cool in the refrigerator for 5 hours.
- Pour the snow into an air balloon and let the air out of the
balloon until only the snow remains inside.
- Close and knot the balloon and freeze at -18 °C for at least 1
hour.
