Lemon Poppy Seed Muffins

makes about 24 cupcakes

Ingredients

• Juice of 2 Lemons
• Lemon Zest
• 300 g Butter
• 250 g Sugar
• 1 Packet Vanilla Sugar
• 5 Eggs
• 300 g Flour (405)
• 1/2 Packet Backing Soda
• 1/2 Tblsp Salt
• 60 g Blue Poppy Seed

Preparation

• Preheat oven to 180°C
• Juice 2 Lemons, add lemon zest.
• In a large bowl, melt butter, sugar, and vanilla sugar. Add eggs when mixture is at room temperature.
• In another bowl, combine flour, salt, backing soda, and poppy seeds.
• Slowly add dry to wet ingredients while stirring continuously.
• finally, add juice of 2 Lemons and lemon zest, stir to combine
• Bake for about 20 minutes
