Corn Muffins
makes 12-16 cupcakes
Ingredients
- 280 grams yellow cornmeal, to be divided
- 130 grams type 405 flour
- 6 g baking soda
- 5 g salt
- 450 ml whole milk
- 150 grams creme fraiche
- 125 grams unsalted butter, melted and cooled slightly
- 60 g sugar
- 2 large eggs
Preparation
- preheat oven to 220°C
- combine 100 g of cornmeal with milk, butter, and sugar in a
saucepan, whisk together in a large saucepan over medium heat until
thickened
- wait until cooled, then add remaining ingredients and combine
thoroughly.
- pour into forms and bake for 15-20 minutes or until golden
brown.
